Imperial Vegetables and Noodles

Ingredients

1 pkg (500 g) Europe’s Best® Imperial Blend vegetables
1 pkg (12 oz/350 g) Cantonese-style steamed chow mein noodles
1-1/2 cups (375 mL) Imagine® Organic Vegetable Broth
2 tbsp (30 mL) naturally brewed soy sauce
2 tbsp (30 mL) cornstarch
1-1/2 tsp (7 mL) sesame oil
1 tbsp (15 mL) Spectrum Naturals® Canola Oil
1 pkg (170 g) Yves Veggie Cuisine® Chicken, Teriyaki Chicken or Beef Veggie Tenders
1 tbsp (15 mL) grated fresh ginger
1 tsp (5 mL) minced garlic
1/4 cup (50 mL) chopped green onion

Directions

  1. Thaw vegetables; drain well. Set aside.
  2. Prepare noodles according to package directions. Set aside and keep hot.
  3. Prepare sauce: In a small bowl, mix together broth and soy sauce. Whisk in cornstarch. Stir in sesame oil. Set aside.
  4. In a large non-stick skillet over medium-high heat, heat oil. Add veggie chicken tenders, ginger and garlic; stir-fry for 1 minute. Add vegetables; stir-fry for 2 minutes. Stir in sauce; reduce heat and simmer for about 2 minutes, until thickened.
  5. Pour vegetable mixture over noodles. Top with green onion. Grab your chopsticks and dig in!
