Avocado and Chimichurri Veggie Dogs

Chimichurri Sauce:
1/2 cup (125 mL) loosely packed fresh parsley
1/2 cup (125 mL) loosely packed fresh cilantro
1/4 cup (60 mL) olive oil
2 tbsp (30 mL) red wine vinegar
1 tbsp (15 mL) lemon juice
2 cloves garlic, minced
1/4 tsp (1 mL) each salt and pepper
1/4 tsp (1 mL) dried oregano
Pinch red chili flakes 

Veggie Dogs:
1 pkg (450 g) Yves Veggie Cuisine® Veggie Dogs Family Pack (12 Veggie Dogs)
12 hot dog buns, toasted
2 ripe avocados, pitted, peeled and diced
1 1/2 cups (375 mL) diced tomatoes

  1. Chimichurri Sauce: In small food processor or mini chopper, purée parsley, cilantro, oil, vinegar, lemon juice, garlic, salt, pepper, oregano and chili flakes until smooth.
  2. Veggie Dogs: Grill Veggie Dogs according to package directions. Serve in buns with diced avocados, tomatoes and some of the Chimichurri Sauce.


Serve with lemon wedges and pickled or fresh jalapeño slices.
Substitute basil or mint for cilantro if desired.
