Cheyenne’s Favourite Veggie Hero

Serves: Makes 4 sandwiches


1 loaf French bread
2 teaspoons Dijon or honey mustard or Spectrum Mayonnaise
2 teaspoons water
1 teaspoon Spectrum Flaxseed Oil
1 tablespoon fresh lemon juice
½ teaspoon dried basil
½ teaspoon dried oregano
½ teaspoon dried marjoram
½ teaspoon sea salt
2 cups shredded romaine lettuce
1 large cucumber, chopped
2 green onions, sliced
2 tomatoes, sliced
4 slices Yves Veggie Cuisine Veggie Bologna
4 slices cheddar cheese
4 slices mozzarella cheese



  1. Cut the French bread in half to the edge.
  2. Do not completely cut in half.
  3. Spread your favourite mustard or Spectrum Mayonnaise across the top and bottom of bread and set aside.
  4. Mix together the water, flax oil, lemon juice, herbs and salt in a small bowl.
  5. Place the lettuce, cucumber and green onions in a bowl.
  6. Pour the lemon juice and flax oil over the veggies and toss gently.
  7. Lay the cheddar cheese across the bottom of the bread.
  8. Next arrange the Yves Veggie Bologna, mozzarella, vegetable mixture and top with tomatoes. Cut into 4 sandwiches and enjoy!
