Grilled Vegan Sausage and Pepper Flatbread

1 pkg (380 g) Yves Veggie Cuisine® Spicy Italian Sausages
All-purpose flour, for dusting
1 lb (500 g) store-bought pizza dough
2 tbsp (30 mL) olive oil
1/2 cup (125 mL) tomato sauce
1 jar (370 mL) sliced roasted peppers, drained
1/2 tsp (2 mL) dried oregano
1 cup (250 mL) arugula
Pinch red chili flakes

Spicy Italian Veggie Sausages


  1. Preheat grill to medium; grease grate well. Grill sausages according to package directions. Slice and set aside.
  2. On lightly floured work surface, cut pizza dough in half. Roll out each portion into 10- x 6-inch (25 x 15 cm) rectangle, about 1/4-inch (5 mm) thick; brush with olive oil.
  3. Grease grate well. Grill flatbreads for 2 to 3 minutes or until bubbles start to form. Flip over; grill for 2 to 3 minutes or until bottom is golden and crisp. Reduce heat to medium-low.
  4. Spread tomato sauce evenly over top. Scatter sausages, peppers and oregano over flatbreads; return to grill. Close lid; grill for 3 to 5 minutes or until heated through.
  5. Sprinkle arugula and chili flakes over top. Cut each flatbread into 8 slices.


  • If desired, sprinkle with a little shredded vegan cheese.
  • Sprinkle fresh torn basil over flatbread if desired.
