Spaghetti and Veggie Meatballs

1 package of Arrowhead Mills® Corn Spaghetti Pasta
1 tbsp (15 mL) Spectrum Naturals® Olive Oil
1 medium onion, chopped
1 clove garlic, minced
1-1/4 cups (300 mL) chopped zucchini
1/3 cup (75 mL) chopped Europe’s Best® Roasted Red and Yellow Peppers Parilla
1 pkg (180 g) Yves Veggie Cuisine®Veggie Meatballs
1 can (24 oz/680 mL) pasta sauce
1 tbsp (15 mL) chopped fresh basil or 1 tsp (5 mL) dried
Grated Parmesan cheese (optional)
Fresh basil leaves for garnish

Veggie Meatballs


  1. Cook pasta according to package directions. Drain and keep warm.
  2. Meanwhile, in large saucepan, heat oil over medium heat. Add onion; cook, stirring for 6 minutes, until soft. Add garlic, zucchini, peppers and veggie meatballs; cook for 3 minutes, stirring often.
  3. Stir in pasta sauce and basil; cover and simmer for 10 minutes.
  4. Serve sauce over pasta. Top with Parmesan cheese and garnish with basil leaves, if desired.
