FOR THE VEGGIE SLAW:
2 medium carrots, peeled and grated
1/4 of a small purple cabbage, shredded
1/2 red bell pepper, finely sliced
3 green onions, chopped
1 small handful cilantro, roughly chopped
1 jalapeno, thinly sliced (optional)
1/2 lime, juiced
FOR THE SPICY PEANUT SAUCE:
1/4 cup natural peanut butter
2 - 3 tablespoons water
2 tablespoons soy sauce
1 tablespoon lime juice
1 clove garlic, finely minced
1/2 tablespoon agave or maple syrup
1 teaspoon hot sauce
FOR THE SWEET POTATO & CHIA BITES:
1 tablespoon light oil (such as canola or vegetable)
1 package Yves Sweet Potato and Chia Bites (or sub Yves Kale and Quinoa Bites or Yves Falafel Balls)
TO ASSEMBLE:
1 head iceberg, butter lettuce, or romaine, leaves separated
1/4 cup salted roasted peanuts, chopped
1. For the veggie slaw: Add all the ingredients to a large bowl and toss well to combine.
2. For the spicy peanut sauce: mix all the ingredients together in a small bowl.
3. For the Sweet Potato & Chia Bites: heat the oil in a skillet or frying pan. When hot add the Sweet Potato & Chia bites. Cook a couple minutes per side until evenly browned all over, shaking the pan or turning the bites as needed.
4. To assemble the lettuce wraps: take a leaf of iceberg lettuce, fill with the veggie slaw, top with 3 to 4 Sweet Potato & Chia Bites, spoon over the spicy peanut sauce to taste, and garnish with chopped peanuts. This makes a great party appetizer as you can serve all the separate elements on a large platter, and everyone can assemble their own lettuce wraps to taste!
